Slow Cooker Spicy Beef and Broccoli Recipe


This recipe is incredibly simple. It truly is dump a bunch of ingredients, add some meat and walk away for several hours. Plus, the little known secret of not-sogggy-broccoli is to add it at the very end (like while you are opening a bottle of wine to go with your meal) and you are making rice.

And finally, don’t let the word “spicy” worry you in the name of the recipe…you can easily dial the spice up or down by the amount of red pepper flakes you use…more spice, add more – less spice, take them out.

Ingredients

  • 12 ounces Beef Roast, sliced thinly (can also use packaged ‘stir fry’ meat in the meat department)
  • 1 cup of Low Sodium Beef Broth
  • 1 teaspoon of Red Pepper Flakes
  • 1/4 cup of Brown Sugar
  • 1 tablespoon of Honey or Agave
  • 3 – 4 Garlic Cloves, minced
  • 1/2 cup of Low Sodium Soy Sauce
  • 2 tablespoons of Cornstarch
  • 1/4 cup of Water
  • 3 cups of Broccoli Florets

Directions

  1. In the bowl of a slow cooker, whisk together broth, red pepper flakes, brown sugar, honey/agave, garlic, and soy sauce. Add beef; stir to coat and evenly distribute. Cover and cook on low for 5 hours.

HEARTY TUSCAN SOUP RECIPE

Hearty Tuscan Soup – charred tomatoes make this soup a little smoky and sweet. And it only tastes 10 minutes to prep!

INGREDIENTS

  • 2 tablespoons extra virgin olive oil
  • 15 ounces cannellini beans (drained)
  • 15 ounces can fire roasted diced tomatoes
  • 1/3 cup dry elbow macaroni
  • 1 medium onion (finely chopped)
  • 1 carrot (roughly chopped)
  • 1 zucchini (roughly chopped)
  • 1 clove garlic (minced)
  • 1 tablespoon thyme (chopped)
  • 1 cup spinach (roughly chopped)
  • 1 quart vegetable broth
  • freshly grated parmesan cheese (optional)



INSTRUCTIONS

  1. In a large pot over high heat, add olive oil, garlic, thyme and onions and cook for 3-4 minutes, until onions are translucent.
  2. Add all other ingredients – except the macaroni – and bring to a boil.
  3. Reduce to a simmer, cover and cook for 10 minutes.

This Farmer’s Casserole recipe is a very popular breakfast recipe.  It’s the perfect recipe to serve when you have a house full of guests or relatives.  Watch the short video showing you how to make Farmer’s Casserole, then scroll to the end of this post to print out the recipe so you can make it at home.

INGREDIENTS

  • 6 cups frozen, shredded hash brown potatoes
  • 1 1/2 cups shredded Jalapeno Monterey Jack Cheese (can sub cheddar or Swiss)
  • 2 cups diced, cooked ham (or Canadian bacon)
  • 1/2 cup sliced green onions
  • 8 large eggs, beaten (or 2 cups egg substitute)
  • 2 12-ounce cans evaporated milk (can use whole, 2% or fat free)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

INSTRUCTIONS

  1. Grease a 3-quart rectangular baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onion. In a large mixing bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture in dish.

SESAME CHICKEN PASTA SALAD WITH GINGER DRESSING

INGREDIENTS:

SALAD:
  • 6-ounces farfalle pasta
  • 12-14 ounces (~1 3/4 cup) cooked diced chicken*
  • 4 cups romaine salad mix
  • 1 (15-ounce) can mandarin oranges
  • 1/3 cup toasted sliced almonds
  • 1 cup chopped cilantro
  • 1/2 cup chopped scallions
  • wonton strips or chow mein noodles*

DRESSING:
  • 1-2 small cloves garlic
  • 1 1/2 tablespoon ginger paste
  • 1/4 cup rice vinegar
  • 2-3 tablespoons low sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon toasted sesame seeds
  • 1/4 cup granulated sugar
  • 1/2 cup clear flavorless oil



DIRECTIONS:

  1. PASTA: Boil the pasta according to package directions.
  2. SALAD: Add the romaine mix, cooked pasta, chicken, mandarin oranges, sliced almonds, chopped cilantro, and scallions to a large bowl. Dress the salad with the desired amount of dressing.
